Cake Mix:

- 1 cup white sugar
- 7 tablespoons unsalted room temperature butter
- 7 tablespoons sour cream
- ½ teaspoon vanilla extract
- 2 teaspoons lime zest
- 3 egg whites
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- A pinch of salt
- 50 ml milk
- 50 ml lime juice
- 2 tablespoons Firebarns Tequila lime


-1/3 cup butter
- 1/3 cup vegetable shortening
- 3 cups icing sugar
- 50 ml lime juice
- 2 tsp lime zest


- Preheat oven to 350°F

- In a bowl, combine sugar and butter with electric mixer, add sour cream, vanilla extract and lime zest. Mix well and set aside;

- Add the egg whites in 3 steps and mix well;

- In another bowl, add the flour, salt and baking powder. Take half of this mixture and stir it into the first bowl.

- In a measuring cup, combine the milk, lime juice and Firebarns Tequila Lime. Mix well and add to the original bowl. Finally, take the remaining mixture (flour, salt, baking powder) and mix together.

- Pour the contents into muffin tins and bake for about 20 minutes or until the cupcakes are done (you can occasionally check for doneness with a toothpick);

- In a separate bowl, mix all the frosting ingredients and pipe the contents into a piping bag;

- Once the cupcakes are thoroughly tempered, decorate with the frosting and sprinkle with lime zest and cookie crumbles;

*For the crumble, mix ½ cup of cookie crumbs and 50 ml of melted butter. Spread on a cookie sheet and bake for about 5 minutes at 450°F.
