FRIED GOAT CHEESE AND SPICED PEARS CHIPOTLE RUM AND MAPLE

Ingredients:

-125g of goat cheese cut in slices (+/- 2cm)

-1 cup of flour

-2 eggs

-1 cup of Panko breadcrumbs

Oil for frying

-2 pears cut into small cubes

-1 tbsp butter

1 oz. Rum

-1 tbsp Firebarns Rum & Chipotle

-1/4 cup maple syrup

Salt and pepper to taste

Balsamic reduction and microfoam to serve

Preparation:

In 3 bowls, add flour, eggs and Panko breadcrumbs. Dip the goat slices individually in the flour, egg and breadcrumbs and fry in oil at 375F for about 2 minutes and set aside on paper towels.

In a skillet over medium high heat, melt the butter and add the pears. Simmer for 1 to 2 minutes and add the rum and maple syrup. Mix well and simmer over medium heat for 3 to 4 minutes.

Serve the goat cheese and pears with a balsamic reduction coulis and a few micro-fruits.
