-½ cup of Hollandaise sauce

-3 sliced breakfast sausages

-4 slices of coarsely chopped bacon

Coarsely chopped ham

-½ finely chopped onion

-1 tbsp butter

-1/4 cup maple syrup

-1 oz of whiskey

-150g of Burrata cheese

-1 tbsp of Firebarns bacon

Salt and pepper to taste

Serve with baguette bread

Fresh sprouts for garnish.


In a skillet over medium heat, sauté onion in butter for 2-3 minutes. Then add the sausages, bacon and ham. Cook for a few minutes and deglaze with Whisky, then add maple syrup, Firebarns Bacon and continue cooking over medium heat for about 5 to 10 minutes, stirring occasionally.

Place the ball of Burrata in the centre of a plate and place the mixture around it. Then drizzle some of the hollandaise sauce over the top of the Burrata. Season with salt and pepper and serve with fresh sprouts.
