Ingredients:
-2 chicken breasts
1/2 cup Firebarns miller zoo
Olive oil for cooking
12 cherry tomatoes, cut in half
-1/2 English cucumber, diced
-1/2 finely chopped red onion
-250 g. cooked quinoa
-2 Naan bread
4 mint leaves
Chopped green onions
Preparation:
In a bowl, combine the chicken breasts and Miller Zoo sauce. Coat chicken breasts well and cover with plastic wrap. Marinate for 2 to 24 hours.
In a skillet over medium-high heat. Sear the chicken breasts on each side until they are well coloured on each side. Continue cooking in 400F oven for about 7 to 8 minutes or until chicken is cooked through.
Slice the chicken and serve in a bowl with a bed of Quinoa, the vegetables and the Naan bread. Add 2 mint leaves, a drizzle of Miller Zoo sauce and sprinkle with green onions.
